Make penne pasta with golden cherry tomato sauce

This penne pasta with fresh cherry tomato sauce recipe is a perfect way to use the incredibly sweet Sun Gold tomatoes. Of course they're great raw on salads, but why only enjoy this delicious cherry tomato cold? This simple penne pasta recipe may not have lots of fancy ingredients, but what it does have is a beautiful sunny gold color and lots of flavor!

Makes 4 portions Penne Pasta with Sun Gold Cherry Tomato Sauce

Ingredients:

* 2 tbsp olive oil
* 4 cloves garlic, sliced
* 4 cups Sun Gold cherry tomatoes, or other sweet cherry tomato variety
* 2 cups chicken or vegetable broth
* 1/4 tsp red pepper flakes
* 2 tbsp fresh oregano leaves
* salt to taste
* 14-oz dry penne pasta, cooked
* 1/2 cup grated real Parmesan cheese (Parmigiano-Reggiano)

Preparation:
Add the olive oil and garlic to a saucepan, and over medium heat, cook until the garlic begins to sizzle. Toss in the cherry tomatoes and chicken broth and bring to a simmer. Cook for about 10-15 minutes, or until the cherry tomatoes soften and start to collapse. Add the pepper flakes, fresh oregano leaves and big pinch of salt. Remove from heat. Using a stick blender (or conventional blender) puree the tomato mixture until smooth. Taste for salt and adjust seasoning. Keep warm over the lowest heat setting until the penne is cooked. Cook penne pasta in boiling salted water according to package directions. Drain well (do not rinse!) and transfer to a large pasta bowl. Pour over the warm sauce and the cheese. Toss everything together to coat the penne with the sauce. Serve hot with more cheese if desired.
